Editor’s Choice: Mini Blueberry Pancake Cups

This week our Editor’s Choice comes to us from Camille over at Growing Up Gabel. Her February 11th Group B assignment was Emily’s blog It Bakes Me Happy, and the recipe she chose was Mini Blueberry Pancake Cups.

I love doing batch cooking sessions and then freezing those items for quick meals and snacks. Especially breakfast items since I’m not much of a morning person. So Camille’s photo of mini blueberry pancake cups caught my eye right away. Isn’t her cup and saucer set beautiful as well? I’m sure these would be great even without syrup.
