Editor’s Choice: Pumpkin Spice Pancakes

This week my Editor’s Choice recipe comes to us from Amy over at Fearless Homemaker. The recipe she chose for her September 24th Group D reveal is the perfect seasonal recipe.

Her assignment was Laura’s blog A Healthy Jalapeno. The delicious recipe she made and shared was Pumpkin Spice Pancakes. What with Fall officially being here now, and pumpkins popping up everywhere from stores, to peoples front porches as decorations, it has definitely showed up in my cooking lately. While I’ve made pumpkin pancakes in the past, this one caught my eye because of the addition of butter, as well as separating the eggs and whipping the whites before adding them to the mixture. A step that ensures fluffy pancakes.
