<p><em>&#8220;May’s SRC assignment was someone I had been hoping for– VeggieGrettie creates vegan and gluten-free versions of classic dishes (Banana Cake!) as well as some novel mixtures. I couldn’t resist two recipes: a pseudo-fudge, and the chickpea-based savory pancakes.&#8221;</em></p>

<p>This month, Lesa of <a title="Edesia's Notebook" href="http://www.edesiasnotebook.com" target="_blank">Edesia&#8217;s Notebook</a> received <a title="Bizzy Bakes" href="http://bizzybakesb.blogspot.com/" target="_blank">Bizzy Bakes</a> by Chaya as her SRC assignment.  Honestly, it is the simple meals that are full of flavor that appeal to me most.  And this one is very appealing!  Lesa intentionally makes her recipes easy enough with delicious, but not numerous, ingredients so that busy people can easily come up with a fabulous dinner on a busy week night.  Browse through her recipes and I&#8217;m sure you will find many that fit a busy lifestyle and suite even the pickiest of palates.  Chaya&#8217;s recipes are fast, easy recipes with few uncomplicated ingredients.  Lesa says . . .</p>
<p><em>&#8220;I saw several recipes on her blog that caught my eye, such as Corn and Sausage Cakes with Tomato Topping, Asian Glased Chicken, and Peach Rhubarb Cream Cheese Coffee Cake.  But the one I decided to go with was her Roasted Salmon and Potatoes.  We love salmon (my girls, ages 2 and 4, practically inhale the stuff!), so I am always eager to try new ways to prepare it.&#8221;</em></p>

<p><em>&#8220;The recipe makes a ton so I’ve been having fun trying different ways to eat it. First, I had it with yellow rice, then I rolled it in tortillas with pickled onions and avocados. But my absolute favorite has been to eat it on a sandwich (torta) with crusty bread, a thin smear of garlic and herb goat cheese, lettuce, cilantro, pickled jalapeños, and more pickled onions. It’s a hearty sandwich – it would be great to bring along on a picnic after a hike – and it’s one of the best that I’ve had in a while.&#8221;</em></p>

You Cook! for her SRC assignment this month.  Nora is a gluten-free gal and her tummy thanks he for it every day.  Her high energy level she attributes to almost eliminating refined sugar &#8211; almost being the key word.  She does indulge a bit during the holidays.  Dena devotes her blog to kosher recipes that include chicken, beef and fish as well as dairy, parve, vegan and vegetarian.  Nora says . . .</p>
<p><em>&#8220;She has so many recipes that I kept drooling over but the one I kept going back to was her Broiled Haddock with Thai Coconut Sauce. I happen to love anything Thai and I’ve been searching for a savory dish that incorporates (one of the many cans of) coconut milk I purchased on sale recently – waalaa, this was the one!  This recipe was amazing, many thanks to Dena for posting this entree that inspired this oh-so-flavorful dinner!&#8221;</em></p>

After reading only a few of her stories, I fell in love with what sounded like the perfect lunch: prawns braised in a fragrant tomato sauce, softened with earthy oregano and dill and topped with sharp feta. Tastiness aside, it was the significance of the recipe that drew me in and begged me to try it.&#8221;</em></p>
