Grilled Pound Cake with Balsamic Berries: That Skinny Chick Can Bake

It seems that pound cake is just a great all-around versatile dessert, or snack, or breakfast. Whether by itself or as a part of a bigger creation, pound cake is loved by everyone I know. And just when I think I have tasted pound cake in every possible form, along comes Liz from That Skinny Chick Can Bake and gives me yet another reason to be thankful for pound cake. YUM! Her inspiration for this delectable delight came from her SRC assignment this month, A Couple In Their Kitchen by Amy and Chris, both high school teachers who enjoy working, playing and eating together in the kitchen. Liz says . . .
“I quickly decided on Grilled Pound Cake with Balsamic Berries. I made my favorite pound cake (Elvis’,too!), but you could easily use one from the bakery for a quick dessert. Mixed berries were gently cooked with a bit of water, sugar and cornstarch plus a bit of balsamic vinegar. I loved the je n’ais sais quois that a tablespoon of quality balsamic vinegar gave the topping….mmmmmm.”

This pound cake looks so much like my favorite Sara Lee brand! (Which I haven’t eaten in years because of staying away from processed foods as much as possible) I cant wait to try this recipe.
