Pesto Poppers-Guest Post

Hi!  I’m Chellie, I have a food blog named Art From My Table and I’m honored to be guest posting today for the Secret Recipe Club!  Today I’m sharing an appetizer that I’ll be serving at my annual Christmas Eve Open House.  This is a tradition we started about 5 years ago.  My extended family doesn’t do anything on Christmas Eve, and my husbands family is out of state, so we thought we’d try having a party.  To our amazement it was a success!  It seems like EVERYONE has plans on Christmas Eve, so we really thought no one might show up.   Some friends come on their way to or from another event, and some just come and linger.  It has become one of my favorite things to do throughout the year, and we’ve been able to catch up with some that we just don’t see the rest of the year.  I always make lots of appetizers, and goodies, and the menu is never the same each year.  Except for one item, Bacon Wrapped Apricots it was a such a hit that I bring it back every year.

Today I’m sharing Pesto Poppers.  I found this at Three Square Chef.  I love it because it’s only 3 ingredients!  And, with the Pesto being green, it’s festive too.  These do take a little bit of time to put together, but totally worth it!!  They are packed with flavor!  I did adapt the amounts a bit.

2 sheets puff pastry
fresh mozzarella
pesto (either home made or store bought)

Preheat the oven to 400.

Starting with 1 sheet of puff pastry, roll it out on a floured surface.  Using a 3 inch biscuit cutter (or in my case a glass) cut out circles in the dough.

Place about 1/4 tsp pesto in the center of each round, and then place your mozzarella on top.

Next wrap the dough over the cheese and pinch together at the top securing with 2 toothpicks.

At this point, you can pop them in the oven until they are golden brown (my oven took about 15 minutes) OR, you can flash freeze them.  You can bake these from frozen!

Here they are all baked up!  YUM!  I hope you enjoy!
