Rollatini: Jane’s Adventures In Dinner

I love ANYTHING that ends in “-tini”.  Concertini, martini, spaghettini and even adantini – which is the same as antidisestablishmentarianism, which used to be one of my favorite words to spell.  However, this may just be my favorite ‘tini of all!!!  Jane who blogs at Jane’s Adventures In Dinner received. Kate’s blog, Kate Is Cooking, for her SRC assignment this month.  And if you haven’t seen this, you need to stop by.  Sounds like the perfect eggplant recipe!  Jane says . . .

“It was like it was meant to be.  The lovely Kate over at kateiscooking.blogspot.com must have been looking in my organic basket because I had just gotten a whole raft of eggplant and wanted something new to try.  Kate had at least 15 different recipes for me to puruse.  I fell in love with Eggplant Involtini right away (as you’ll see).”
