Scallops with Creamy Pesto Pasta: Eat Little, Eat Big

There is no seafood better than a perfectly seared scallop.  There, I’ve said it.  A place your are certain to find a great recipe for a great scallop meal is at Eat Little, Eat Big whose author, Susie, happens to be reporting to us from Maui.  Yes, as in the Hawaiian Islands.  She loves food that is simple, healthy and delicious.  She is also working on her photography which she says is a “long journey”.  Susie’s SRC assignment this month was Cook Lisa Cook, authored by none other than Lisa.    Lisa lists some of her interests as Birkenstocks, crafts, ethnic foods, and Chinese children.  You see, Lisa and her husband have adopted an adorable little girl who is from China and, like any mother, her daughter is her life.  So much so she has another blog that talks about their adoption of Maisie.  Susie says . . .

“This recipe comes together pretty quickly so best to be organized.  I think this would also be good with shrimp.  Thanks to Lisa for a creative recipe idea!”
