Southwestern Salad With Parsley Lime Dressing: Chef In Disguise

There are two things in life that I struggle with almost daily.  What to fix for breakfast that is a bit different from my norm, and the same with a salad.  Well, honey, I’m pretty sure we have a winner here!  Ding, ding, ding, ding!!!  Sawsan who blogs over at Chef In Disguise (and all the way from Amman, Jordan) received Shannon’s blog, searching for dessert, for her SRC assignment this month.  Sawsan said . . .

“The Southwestern salad is colorful and refreshing, a great way to combat cold grey fall days in which colors seem to be seeping out of everything. The different textures make this salad more interesting, the crunch of the lettuce, the creaminess of the avocados. The juicy tomatoes and buttery beans. What ties the whole thing together though is the dressing. If you have never tried combining garlic, parsley and yogurt, you ,my friend, are really missing out .”
