Tortellini, Basil, and Fire Roasted Tomato Soup: Inquiring Chef

We just returned from a trip to the mountains. With elevations from 8,000 feet to over 12,000 feet, fall was definitely in the air. Even the aspen trees were beginning to turn! And that is the perfect weather for this soup. Jess who blogs over at the Inquiring Chef received Aly’s blog, Cooking in Stilettos (ouch!). These two blogs are not to be missed as they have something for everyone. Jess says . . .
“This recipe for Garlicky Tortellini, Spinach, and Tomato Soup immediately jumped out at me. It was stunningly simple, yet full of flavor. I cut back on the garlic element in my version and let those fire roasted tomatoes really take lead billing.
The ingredients in this soup just play so nicely together. With a change in season around the corner for so many of you, this is a great one to keep in mind for chilly evenings.”
